What each ingredient does

Cucumbers
Make up the bulk of the ketchup and give it its fresh, watery body.
Vinegar
Adds sharp acidity that brightens the flavour and helps preserve the mixture.
Mustard
Adds pungent, sharp flavour that gives the ketchup its bite.
White pepper
Adds mild heat and a gentle aroma without dark specks.

The step that matters

Draining the salted cucumber mixture overnight. Salt draws water out of the grated cucumbers and onions through osmosis. If the mixture is not drained well, excess water thins the finished ketchup and dilutes its flavour.

Swap the white pepper

How well each one fits the dish's main ingredients (cucumber, vinegar, mustard):

  1. Tarragonfits better
  2. Capersfits better
  3. Dillfits better
