1 lb beef suet; 1 lemon, the grated rind only;

1 lb. bread crumbs; Salt;

1 lb. brown sugar; 1 lb. figs. 5 eggs;

Chop figs very fine, shred suet to a powder, mix all ingre- dients, beating yolks and whites of eggs separately and using just a little salt ; boil three hours in a mould. Serve the follow- ing hard butter sauce :
