What each ingredient does

Eggs
Provide structure and moisture, setting the pudding as it steams.
Grated almonds
Add body, moisture and nutty flavour to the pudding.
Sugar
Adds sweetness and helps give a tender texture.
Flour
Adds light structure to the whites so the mixture holds together.
