How We Cook in Tennessee

Ingredients

Directions

Prepare the eggs

  1. Boil eggs for twenty minutes.

  2. Remove shells and cut each egg carefully lengthwise.

  3. Remove yolks and set whites of each egg together so they do not mix.

Fill and assemble

  1. Make a forcemeat of one cup cold meat chopped fine.

  2. If using chicken, season with celery or parsley; if using ham, season with mustard and cayenne; if using veal, season with lemon juice or horseradish catsup.

  3. Add salt, pepper, and melted butter to the meat mixture.

  4. Fill the cavities of the egg whites with the seasoned meat mixture.

  5. Put the halves together.
