What each ingredient does

Cranberries
Provide the main fruit body and tart flavor that the stew is built on.
Sugar
Sweetens the tart cranberries and, as it cooks with the fruit, helps the mixture thicken and set.

The step that matters

Simmer ten minutes after adding the sugar. Cranberries are very tart and the sugar needs time to dissolve and blend evenly. Cranberries contain natural pectin, and pectin sets as the mixture cools, so the stew jells when cold. Stop too early and it may stay runny.
