What each ingredient does

Veal
Forms the bulk and firm, sliceable structure of the loaf as its proteins set during baking.
Eggs
Bind the meat together and help the loaf hold its shape when cooked.
Cream
Adds moisture and softness, helping keep the meat from drying out.
Butter
Adds fat and richness, contributing flavor and a tender texture.

The step that matters

Bake for 3 hours. A long bake lets the loaf cook through and set firmly, while the cream, butter and water on top help limit drying of the lean meat.
