Butter and flour share little aroma chemistry, yet 124,287 recipes mention both: they likely work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Melted and browned with flour, it forms a roux that adds richness and nutty flavour.
Flour
Browned with butter to form a roux that thickens the sauce.
Tomatoes (in the method)
Form the base of the sauce, providing body, acidity and flavour.

The step that matters

Brown the butter and flour together, but do not burn. The roux must brown enough to add nutty flavour and thicken the sauce, but burnt flour turns bitter and dark. Cooking gently and stirring keeps the roux evenly coloured.

Flavor stand-ins for the clove

How well each one fits the dish's main ingredients (butter, flour, lemon, pepper):

  1. Parsleybetter flavor fit
  2. Thymebetter flavor fit
  3. Marjorambetter flavor fit
  4. Clovethe original

Fit is the average pairing score against butter, flour, lemon, pepper. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
