Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Hard boiled eggs
Mashed yolks bind with the butter and vinegar to give the dressing body.
Butter
Melted butter adds richness and a smooth, creamy texture to the dressing.
Vinegar
Adds sharpness that balances the richness of the yolks and butter.

The step that matters

Add the vinegar gradually. Adding vinegar slowly while mixing lets the yolk and butter emulsify into a smooth dressing. Pouring it in all at once can cause the mixture to separate and look broken.

Swap the mustard
