Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Fat that carries flavour and starts the roux with the flour.
Flour
Thickens the sauce as it cooks with the butter and browns slightly.
Tomatoes
Forms the main body of the sauce and provides its bright acidity.
Onion
Adds savoury aroma as it cooks into the sauce.
Cloves
Adds warm, aromatic spice notes to the sauce.

The step that matters

Stirring the flour into the hot butter. Flour added in lumps or left unstirred clumps and makes the sauce grainy. Stirring constantly until smooth lets the flour disperse evenly. Cooking it briefly with the fat also keeps it from tasting raw and lets it thicken the sauce properly.

Swap the clove

How well each one fits the dish's main ingredients (flour, onion, tomato, butter):

  1. Garlicfits better
  2. Capersfits better
  3. Thymefits better
  4. Clovethe original

Fit is the average pairing score against flour, onion, tomato, butter. Candidates are from the same food group and used in at least 100 recipes.
