Bake and serve

  1. Turn the mixture into a pudding dish and bake for 15 minutes, or until nicely browned, in a slow oven.

  2. Serve cold with whipped cream.

What each ingredient does

Prunes
Provide the main body, sweetness and flavour of the whip as a thick paste.
Egg whites
Whipped to a stiff froth, they lighten the mixture and give it its airy structure.
Sugar
Adds sweetness and balances the tartness of the stewed prunes.

The step that matters

Folding the egg whites into the cooled prune paste. Egg whites hold air only when beaten to a stiff froth, and the prune paste must be cool so it does not deflate them. Mixing thoroughly but gently keeps the lightness that makes the whip rise and set in the oven.
