To Boil Rock Fish

Ingredients

Directions

Boil the fish

  1. Clean the head and shoulders of the rockfish, put into a fish kettle with cold water and salt, boil gently and skim.

  2. When done, drain the water, lay the fish in a dish, and garnish with scraped horse-radish.

  3. Melt two boats of butter with chopped parsley, or use anchovy butter.

  4. Fry the roe and liver and serve them in separate dishes.

Use the leftovers

  1. If any of the rockfish remains, it will make a delicious dish.

  2. Pick the fish in small pieces.

  3. Put the pieces in a stew pan with a gill of water, a lump of butter, salt, a large spoonful of lemon pickle, and a splash of pepper vinegar.

  4. Shake over the fire until perfectly hot, then serve.

What each ingredient does

Rockfish (in the method)
Forms the main body of the dish, flaking into pieces when cooked and reheated.
Butter
Adds richness and moisture, coating the fish and carrying flavour when melted.
Lemon pickle
Adds sharp, acidic brightness that cuts through the richness of the butter.
