Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells during soaking and cooking, thickening the milk and giving the pudding its body.
Milk
Forms the liquid base that the tapioca thickens into a creamy pudding.
Eggs
Egg yolks thicken the custard when heated, while beaten whites add lightness when folded in.
Sugar
Adds sweetness and helps balance the flavor of the milk and eggs.

The step that matters

Adding the hot mixture to the egg yolks. Pouring hot liquid into yolks too quickly can scramble them. Adding it gradually, while whisking, warms the yolks evenly so the custard thickens smoothly.
