Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓
Dried Apple Roly Poly
Ingredients
Directions
Make the dough
Sift a pint of flour, two tablespoons of baking powder and one-half teaspoon of salt, then rub in one tablespoon of shortening.
Add two-thirds cup of water, knead quickly and roll out into a very thin sheet.
Brush with melted butter.
Fill and roll
Chop dried apples finely; the apples should have been soaked overnight.
Sprinkle over the dough the apples and four tablespoons of sugar.
Roll up and place in a buttered baking pan.
Brush with water and bake in a moderately hot oven for three-quarters of an hour.
Bake and serve
After the roll has been baking for half an hour, baste with a tablespoon of sugar dissolved in two tablespoons of water; return to the oven to glaze.
Serve hot with cream and sugar.

What each ingredient does
- Flour
- Forms the structure of the dough that holds the roll together.
- Baking powder
- Releases gas in the dough, helping it rise and turn light in the oven.
- Shortening
- Rubbed into the flour, it tenderises the dough by coating the flour particles.
- Dried apples (in the method)
- Provide the fruit filling and concentrated apple flavour and sweetness.
- Sugar
- Sweetens the filling and, in the glaze, helps the roll brown on the surface.
The step that matters
Rolling the dough very thin. A very thin sheet is needed so the roll bakes through evenly and stays light rather than dense or gummy in the centre.
