Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Farina (in the method)
Thickens the mixture into a paste as its starch swells and sets when heated.
Eggs
Bind the pudding and help it set into a firm, custard-like texture.
Milk
Adds moisture and softness, and its sugars and proteins contribute to browning.
Butter
Adds fat for richness and a smoother, more tender texture.

The step that matters

Sifting the farina into boiling water. Adding farina slowly while stirring disperses the starch granules evenly. Dumped in at once, they clump, leaving lumps that never fully smooth out.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, butter, egg):

  1. Nutmegthe original
  2. Cinnamonfits about as well
  3. Parsleyfits less well
  4. Tarragonfits less well

Fit is the average pairing score against milk, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
