Lift each point of the back shell, and remove the spongy substance found beneath it, taking care to scrape and cut away every bit. Turn the crab on its back, and remove the semi-cir- cular piece of dark, soft shell called the "apron" or " flap " and more of the same spongy substance lying under it. Wash in

eoid water and dry carefully on a towel. Season with salt and pepper, dip in egg and roll in crumbs. Fry about three minutes in very hot fat, putting in only two at a time, as they should be ice-cold when prepared. Serve with Tartar sauce.
