What each ingredient does
- Dried herbs (in the method)
- Supply the flavour and aroma that dissolve into the hot water during steeping.
The step that matters
Avoid steeping longer than 10 minutes. Steeping continues extracting compounds while the herbs stay wet. Longer steeping draws out bitter compounds along with the pleasant aroma, so the tea turns harsh and astringent. Timing controls the balance of flavour.
