Take three large quinces^ put them to scald in boiling water till tender^ then put them into cold water^ cut them in quarters^ take out the cores^ and peel them properly ; then make a syrup in a preserving.pan with a quarter of a pound of sugar and half a glass of water^ boil and skim it clear* Serve hot, with the syrup poured over.
