Directions

Make the tablet

  1. Boil a pound of sugar for twenty minutes.

  3. Continue boiling until the mixture crackles when dropped in cold water and snaps between the teeth.

Shape and cool

  1. Pour the hot mixture into an oiled tin mould.

  2. When nearly cold, remove from the mould or place in a paper case.

  3. Optionally, work a portion white by adding almonds while still soft.

Make the caramel almond batch

  1. Blanch twelve ounces of almonds, wipe them very dry, and heat them in an oven.

  2. Boil six ounces of sugar to caramel.

  3. Throw the hot almonds into the caramelized sugar and mix.

  4. Pour the mixture into oiled moulds.

  5. Press the mixture around the mould, making it thin, and let it cool.

What each ingredient does

Sugar
Boiling it to a set stage gives the tablet its hard, brittle, glassy structure as it cools.
Almonds
Add crunch and nutty flavour, and drying them first helps them stay crisp in the hot sugar.

The step that matters

Continue boiling until the mixture crackles when dropped in cold water. Sugar must reach the right temperature to set hard when cool. Stopping early leaves the tablet soft and sticky, while overcooking makes it bitter and burnt.
