Directions

1 lb. steak. 1 teaspoonful chopped parsley.

2 tablespoonsful breadcrumbs. 1 teaspoonful flour.

1 tablespoonful chopped suet 1 onion chopped.

1 dessertspoonful chopped a little pepper and salt, boiled ham.

Mix together bread-crumbs, suet, parsley, a little pepper and salt, and the ham. Have the steak cut in one thin slice ; spread the mixture on it ; roll it up and tie securely with string ; put 1 teaspoonful of dripping into a stewpan and when smoking hot, fry the meat all round ; use a spoon for turning it over ; lift it out and put in a small onion and fry. Then sprinkle in flour ; mix it with the brown in the pan ; add the water, and stir until boiling ; return the meat to the pan and simmer very gently for two hours. If any more water is needed use hot water ; place meat on a hot dish and remove the string ; add pepper and salt to the gravy ; let it boil up and strain it over meat ; \ pint water ; 1 lb. of meat.
