What each ingredient does

Macaroons (in the method)
Their crumbed texture and sweet almond flavour form the body of the cream.
Cream
Whipped into a stiff froth, it gives the dish its light, airy texture and richness.
Milk
Loosens the crushed macaroons into a smooth paste that can be spread in layers.

The step that matters

Whipping the cream to a stiff froth. Cream must be whipped until it holds its shape; under-whipped cream collapses and thins the layers, while over-whipped cream turns grainy and can separate.
