What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable savoury custard when baked.
Allinson bread toast
Soaks up the milk and gives the pie body and structure.
Milk
Adds moisture and softens the bread so the mixture bakes evenly.
Mushrooms (in the method)
Provide the main savoury flavour and moisture in the filling.
Onion
Adds sweetness and savoury depth when fried in butter.

The step that matters

Pouring and baking the mixture. Eggs set through gentle heat; if the filling is overcooked or the oven too hot, the custard can curdle, turn rubbery and weep liquid.

Swap the onion
