What each ingredient does

Currant jelly (in the method)
Provides sweetness and body, thickening the sauce as it simmers.
Port wine (in the method)
Adds depth and acidity, giving the sauce its characteristic flavour.
Cold butter
Adds richness and gloss, giving the sauce a smooth finish.

The step that matters

Simmer all together a few minutes, adding the wine after it is strained.. Simmering briefly reduces the liquid and melds the flavours without over-concentrating the sauce. Adding the port after straining keeps its delicate aroma from cooking off.
