Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat for a tender crumb and rich flavor.
Sugar
Sweetens the cake and helps it brown while baking.
Cornstarch
Softens the crumb, giving a finer, more delicate texture than flour alone.
Eggs
Whipped whites trap air, giving the cake structure and lift.
Cream of tartar
Acid that stabilizes the beaten whites and reacts with soda to help the cake rise.

The step that matters

Beating the egg whites to a stiff froth. The whites must be beaten until they hold stiff peaks. Their trapped air is a main source of lift, and cream of tartar helps the foam stay stable. Underbeaten whites give a dense cake.
