Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs trap air and set with the heat, giving the pudding its structure and lift.
Flour
Its starch sets as it bakes, giving the pudding body and a firm crumb.
Milk
Supplies liquid that turns to steam and keeps the pudding moist.
Cream
Adds fat for richness and a soft, tender texture.
Sugar
Adds sweetness and helps the top brown as it bakes.

The step that matters

Beat the eggs well. Thoroughly beaten eggs hold air that expands in the oven and helps the pudding rise. Under-beaten eggs leave a denser, flatter result, and the proteins set the batter's structure as it bakes.
