What each ingredient does

Arrowroot
Starch that thickens the hot milk into a smooth, set pudding as it cooks.
Milk
Liquid base that the arrowroot thickens, giving the pudding its body and creaminess.
White sugar
Adds sweetness and balances the mild flavor of the milk and rose-water.

The step that matters

Boil and stir for eight minutes. Arrowroot must be fully mixed in and kept moving while boiling. Its starch swells and thickens as it heats, and stirring prevents lumps and scorching on the base of the pan.
