What each ingredient does

Cos lettuce (in the method)
Forms the crisp, leafy base of the salad.
Cream
Adds richness and a smooth, creamy texture to the dressing.
Vinegar
Adds acidity that brightens the flavour and balances the cream.

The step that matters

Shake off all moisture from the lettuce. Water left on the leaves dilutes the cream and vinegar, so the dressing becomes thin and slides off instead of coating the leaves.
