Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes (in the method)
Form the bulk of the dish, absorbing the white sauce and giving body to each serving.
White sauce
Supplies moisture and richness so the potatoes stay creamy rather than dry.
Grated parmesan cheese
Adds savoury flavour and helps the top brown in the oven.

The step that matters

Watch the time in the oven. A few minutes in a quick oven is enough to brown the top. Leaving it longer dries out the sauce and potatoes, so the gratin loses its creaminess.
