Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brown sugar
Adds sweetness and body to the creamed base.
Butter
Creams with the sugar to give the sauce richness and a smooth texture.
Egg yolks
Thicken the sauce as they gently cook in the warm water bath.

The step that matters

Stir until thick over hot water. Egg yolks thicken through gentle heat, and if the water is too hot or the heat too fierce they can scramble and curdle. Keep the bowl over hot water, not boiling, and stir constantly.
