What each ingredient does

American cheese
Melts into the sauce to give it its main body and rich flavour.
Eggs
Thicken the cheese mixture as they set when gently heated, giving it body.
Milk
Loosens the melted cheese into a smooth, pourable sauce.
Butter
Melts first to coat the pan and add richness to the sauce.
Mustard
Adds a sharp, tangy flavour that cuts the richness of the cheese.

The step that matters

Add the eggs and stir until it thickens. Eggs thicken when heated, but if the mixture gets too hot they can curdle or scramble. Keep the heat low and stir steadily so the sauce becomes smooth and thick.
