Explore the science

What each ingredient does

Yeast cake (in the method)
Ferments the dough, producing gas that makes it rise and turn light.
Whole wheat flour (in the method)
Forms the batter and then the dough, providing the structure that holds the risen gas.
Milk
Adds richness and softness to the crumb and helps the dough brown.

The step that matters

Beat the batter for fifteen minutes. Beating develops gluten in the whole wheat flour, giving the dough strength to trap the gas from the yeast so it rises well.
