Cream of Green Peas Soup

Ingredients

Directions

  1. Combine 1 pint stewed or canned, well matured green peas, 1-1½ quarts rich milk, and salt.

  2. Heat peas, rub through a colander, add hot milk gradually, stirring, then add salt.

  3. Heat well, serve.

  4. If peas are not sweet, add 2 teaspoons of sugar.

  5. The soup may be thickened with 1 tablespoon of flour.

  6. It may also be flavored with stalks of celery or slices of onion, for variety; but nice-flavored peas do not require any additional flavoring.
