Why it works: Sugar and lemon are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 53,532 recipes. Both carry 2-nonenal, which smells fatty, green. The science ↓
Lemon Sauce--Egg
Ingredients
Directions
In a saucepan, combine 1 cup water, ½–⅔ cup sugar, and ⅔–1 tablespoon lemon oil; bring to a boil.
Whisk 1 egg yolk with 1½–2 tablespoons corn starch.
Add the corn starch mixture to the boiling sugar-water, stir, and boil until thickened.
Remove from heat, add lemon juice and a pinch of salt, stir well but do not boil.
Use one yolk for twice the quantity of sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolk
- Thickens and enriches the sauce, adding richness and a smooth body.
- Corn starch (in the method)
- Thickens the sauce by gelatinizing when boiled with the liquid.
- Sugar
- Adds sweetness and balances the tartness of the lemon.
The step that matters
Adding the lemon juice. Remove the sauce from heat before adding lemon juice and do not boil it again. Egg yolk can curdle or turn grainy when heated too long, and boiling after the yolk is added can spoil the smooth texture.
Swap the lemon
How well each one fits the dish's main ingredients (sugar, egg):
- Vanillafits better
- Raisinfits about as well
- Lemonthe original
- Datesfits less well
Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
