★ Granella No. 1--wheat, Corn and Oats

Ingredients

Directions

Make the dough

  1. Mix dry ingredients.

  2. Add water to ¾ of the quantity for a stiff dough, then work in the remaining ¼ of water until almost too stiff to knead.

  3. Scald the granular meal with part of the water to avoid a sandy texture.

  4. Roll and pound dough to ¼ or ⅓ inch thick.

  5. Cut dough into round or square biscuits.

  6. Set biscuits in a cold place for 2 hours or more.

Bake and serve

  1. Bake biscuits in a slow oven until a rich cream color or golden brown all through.

  2. Grind biscuits coarse or fine as desired.

What each ingredient does

Yellow granular meal
Provides the main grain body and texture of the biscuits when scalded before mixing.
Water
Hydrates the dry ingredients so they form a stiff dough that can be rolled and cut.

The step that matters

Scald the granular meal with part of the water. Scalding swells the starch in the coarse meal so it softens during baking. Unscalded meal stays gritty, giving the sandy texture the step is meant to prevent.
