What each ingredient does

Eggs
Yolks enrich the batter and the whites, folded in stiff, lighten it for a tender texture.
Milk
Adds moisture and richness, loosening the batter to a spoonable consistency.
Hominy
Cooked grain that thickens the batter and gives it a soft, starchy body.

The step that matters

Fold in stiffly-beaten whites of eggs. Whites hold air only when beaten stiff and folded in gently; overmixing deflates them, so the batter loses the lift that keeps it light.
