What each ingredient does

Cocoa shells
Provides the main cocoa flavour and colour as they steep in the boiling water.

The step that matters

Keeping the water topped up while boiling. As water evaporates over three hours, the liquid concentrates and the shells can scorch on the base of the pan, so adding water keeps the drink from tasting burnt.
