Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure that holds the shortcake together as it bakes.
Baking powder
Releases gas during baking so the shortcakes rise and turn light.
Butter
Coats flour particles to tenderize the crumb and adds richness.
Milk
Hydrates the flour to form a dough and adds moisture and browning.
Sugar
Sweetens the shortcake and helps it brown in the oven.

The step that matters

Working the butter into the dry ingredients. Rubbing the butter in cold with fingertips leaves small pieces that melt in the oven, creating flaky layers. Overworking the dough develops gluten and makes the shortcake tough.
