What each ingredient does

Celery
Provides the main body and the characteristic celery flavor of the soup.
White stock
Supplies the savory liquid base that the celery cooks in and is strained into.
Butter
Adds fat and rich flavor to the soup.
Flour
Thickens the soup as its starch swells in the hot liquid.
Milk
Adds creaminess and softens the flavor of the soup.
Cream
Adds fat for a richer, smoother mouthfeel.

The step that matters

Bind. Flour thickens the liquid only when it is evenly dispersed and heated, so stirring it smoothly into the hot liquid prevents lumps and gives an even, silky body.
