What each ingredient does

Butter
Browned in the pan to give a nutty, rich flavour base for the sauce.
Flour
Cooked with the butter to form a roux that thickens the sauce.
Stewed tomatoes
Provide the main tomato flavour, acidity and body of the sauce.
Brown stock
Adds savoury depth and liquid, turning the roux into a flavourful sauce.

The step that matters

Stir the flour until well browned. Cooking the flour in butter develops colour and nutty flavour, but if it burns it turns bitter. Stirring constantly and watching the colour keeps the roux flavourful and thickening properly.
