Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Halibut
Forms the main body of the timbales, providing the flavour and the set base.
Eggs whites
Beaten in at the end to lighten the mixture and help it rise and set in the oven.
Thick cream
Beaten until stiff and folded in, adding richness and a moist, tender texture.

The step that matters

Fold in beaten egg whites. Folding gently keeps the air beaten into the whites; deflating the mixture makes the timbales dense rather than light when baked.

Swap the lemon

How well each one fits the dish's main ingredients (cream, egg):

  1. Vanillafits better
  2. Raspberryfits better
  3. Strawberryfits better

Fit is the average pairing score against cream, egg. Candidates are from the same food group and used in at least 100 recipes.
