What each ingredient does

Flour
Forms the structure of the pudding as it sets during steaming.
Baking powder
Releases gas in the batter, helping the pudding rise and become light.
Butter
Adds richness and tenderness to the crumb.
Egg
Binds the batter and helps give it structure as it cooks.
Milk
Adds moisture and hydrates the flour to form a batter.
Baker’s chocolate
Gives the pudding its chocolate flavour and deep colour.
