Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the mixture and helps keep the ice cream smooth and scoopable.
Orange juice
Adds bright orange flavour and acidity to the base.
Egg yolks
Thicken the custard and add richness to the texture.
Heavy cream
Adds fat and body, giving a creamy, light texture when whipped.
Candied orange peel
Adds chewy pieces and concentrated orange aroma.

The step that matters

Cook the yolk custard until it thickens. Egg yolks thicken as they heat, but overheating scrambles them into lumps. Cooking gently over hot water, rather than direct heat, keeps the custard smooth.
