Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mashed potatoes (in the method)
Provides the bulk and moist body of the pudding.
Butter
Adds richness and a smooth, tender texture.
Eggs
Bind the mixture and help it set as it cooks.
Fine sugar (in the method)
Adds sweetness and helps the top brown.

The step that matters

Beating the batter well. Thorough beating blends the potatoes, butter, sugar and eggs into one smooth mixture. Lumps of butter or unmixed egg can leave a grainy or uneven texture in the set pudding.
