Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whisked whites trap air that lifts the batter as it bakes, while yolks add richness and set the structure.
Flour
Starch and protein form the structure that holds the risen batter in shape as it bakes.
Butter
Melted butter adds fat, which gives the batter a tender texture and rich flavour.
Milk
Liquid that hydrates the flour and helps set the batter as it bakes.

The step that matters

Beat the air well in. Whipped egg whites hold air that makes the muffins rise. If the whites are under-beaten or deflated by overmixing, the batter will be dense and flat.
