Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten eggs add structure and help bind the batter together.
Butter
Melted butter adds richness and moisture to the crumb.
Soda
Reacting with the sour milk, it helps the cornbread rise and lighten.
Sour milk or buttermilk
Its acidity activates the soda and adds tang and tenderness.
Meal (in the method)
Cornmeal forms the body and characteristic texture of the cornbread.

The step that matters

Beat very hard after adding the soda. Once the soda meets the acidic milk, it starts producing gas. Beating well distributes these bubbles through the batter, so the cornbread rises evenly. Baking soon after mixing keeps that lift from fading.
