Chicken Pie

Ingredients

Directions

Prepare the filling

  1. Boil the chicken until tender, then remove the bones.

  2. Throw the bones back into the boiling water with onion, salt, and pepper.

  3. Boil down the mixture, strain, and put on ice to form chicken jelly.

  4. Cut all the meat finely.

Make the sauce

  1. Melt a tablespoon of butter with 2 heaping tablespoons of flour.

  2. Add the jelly, the meat, ½ can of mushrooms with some of the liquor, 3 hard‑boiled eggs chopped finely, a little salt, 1 tablespoonful of Worcester sauce, grated lemon peel, and 1 wineglass of sherry to the butter‑flour mixture.

Bake and serve

  1. Line the sides of a pie dish with good crusts.

  2. Bake in an oven until brown.

  3. Pour in the chicken, put a light crust on top, bake again, and serve as soon as it becomes a light brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat and, through its bones, the jelly that moistens and sets the filling.
Flour
Melted with butter to form a roux that thickens the filling into a smooth sauce.
Butter
Fat that cooks with the flour to form the roux and adds richness to the sauce.
Hard boiled eggs
Chopped finely and folded in, adding body and richness to the filling.
Sherry
Adds aroma and a sweet-acidic depth to the sauce.

The step that matters

Bake until light brown, then stop. Browning the crust depends on oven heat, and over-baking dries the filling and toughens the pastry, so it should be removed as soon as it turns light brown.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
