What each ingredient does

Egg white
Beaten stiff, it gives the minced chicken mixture lift and a light, set texture when steamed.
Flour
Thickens the mixture and the sauce so they hold their shape and body.
Butter
Adds richness and fat to the sauce, carrying flavour and smoothing its texture.
Cream
Adds fat and richness, giving the timbales a tender texture and the sauce a silky body.
Mushrooms
Add earthy flavour and moisture to both the timbale mixture and the sauce.

The step that matters

Steaming the timbales. Steam gently and for the full time so the egg white and flour set the mixture into a firm but tender custard-like texture. Too much heat can make it rubbery or cause it to weep.

Swap the parsley

How well each one fits the dish's main ingredients (butter, flour, cream, onion, mushroom, chicken, milk):

  1. Garlicfits better
  2. Thymefits better
  3. Nutmegfits better
  4. Parsleythe original

Fit is the average pairing score against butter, flour, cream, onion, mushroom, chicken, milk. Candidates are from the same food group and used in at least 100 recipes.
