Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Eggs
- Add structure and richness to the batter as they set during baking.
- Flour
- Forms the main structure of the cake as its proteins set in the oven.
- Butter
- Adds fat for a tender crumb and rich flavor.
- Sugar
- Sweetens the cake and helps it brown on top.
- Cream of tartar
- Acidifies the batter so the soda reacts and helps the cake rise.
- Baking soda
- Reacts with the acid in the batter to produce gas that lifts the cake.
The step that matters
Dissolving the soda in milk before mixing. Baking soda must be fully dissolved and evenly distributed so it reacts with the acid in the batter. Clumps can leave bitter spots or uneven rising.
