Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the dressing as they set with heat, giving it body and a smooth, creamy texture.
Butter
Adds richness and a smooth mouthfeel to the dressing.
Vinegar
Adds sharp acidity that balances the sugar and richness.
Cream
Adds fat and richness, softening the sharpness of the vinegar.

The step that matters

Boil the mixture until thick. Egg proteins set as they heat, thickening the dressing. Overheating can curdle the eggs into lumps, so heat gently and stir constantly.
