Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide the starch that thickens the soup into a smooth, body-rich purée.
Onions
Add savoury sweetness and aroma as they soften in the cooking water.
Milk
Adds creaminess and softens the flavour of the purée.
Butter
Adds fat for richness and a smooth, rounded mouthfeel.

The step that matters

Passing the mixture through a sieve. Pressing the cooked potatoes and onions through a sieve breaks down the starch cells and removes fibrous bits, giving a smooth texture. Letting the mixture cool slightly first makes it easier to press through.
