What each ingredient does

Chicken
Adds meat and savory flavor to the cooking water that the rice absorbs.
Rice
Absorbs the cooking liquid and softens, forming the body of the pilaf.

The step that matters

Reduce heat and stir occasionally. Rice starch settles and sticks to the bottom of the pot as it cooks, and can scorch if the heat is too high or the rice is left unstirred. Gentle heat and occasional stirring keep the grains loose and the bottom from burning.
